Mocha Fudge Cupcakes

Ingredients:

Chocolate Fudge Cupcakes

  •     2/3 cup granulated white sugar
  •     1/2 cup plus 1 tablespoon all-purpose flour
  •     1/3 cup dutch process cocoa powder
  •     1/2 teaspoon baking powder
  •     1/2 teaspoon baking soda
  •     1/4 teaspoon salt
  •     1/3 cup buttermilk OR 1/3 cup whole milk mixed with 1 teaspoon vinegar
  •     1 large egg
  •     2 1/2 tablespoons vegetable oil
  •     3/4 teaspoon vanilla extract
  •     3/4 teaspoon espresso powder
  •     1/3 cup boiling water
Chocolate Espresso Buttercream Frosting

  •     1/2 cup (1 stick) butter, softened
  •     2 cups powdered sugar
  •     1/2 cup cocoa powder, unsweetened
  •     1 tablespoon espresso powder
  •     4-6 tablespoons cream, half & half or milk
  •     1 teaspoons pure vanilla extract
Chocolate Glaze Drizzle

  •     1/4 cup semi-sweet chocolate chips
  •     1 tablespoon unsalted butter
  •     1 teaspoon light corn syrup
  •     1/8 teaspoon pure vanilla extract
Vanilla Espresso Buttercream Frosting

  •     1/4 cup (1/2 stick/4 tablespoons) butter, softened
  •     1 cup powdered sugar, sifted
  •     1 tablespoon cream, half & half or milk
  •     1/2 teaspoon pure vanilla extract (use imitation vanilla for a pure white color)
  •     1/4 teaspoon espresso powder
  •     pinch salt (omit if using salted butter)
Garnish

  •     chocolate covered espresso beans
